If you have quite a few books stored on your Kindle (all except the Fire), you have probably already begun organizing them in collections with various names to help you find what you want quickly. When you choose Menu, then Sort by, and Collections, I believe they end up being sorted alphabetically. If that is ok with you, leave it alone. But if you want a little more control over what will be at the top of the list, insert a number at the beginning of the collection name (followed by a space).
To rename an existing collection (this will not disturb any books already in it), Touch and hold the collection name until you see menu options. Choose rename collection.
